Another off day, not in a mood to go out and too lazy to go to the dining hall to enjoy lunch with fellow colleagues, so why not whisk my own quick dish? Today, I'm having spicy seafood fettuccine. 
 

Spicy Seafood Fettucine. Cooking time +/-30minutes... 
What you need for 1 serving;-

  • 1 bowl of cooked fettuccine (cooked al dente)
  • 2 medium size squids, cut into ring 
  • 4-5 prawns, shelled
  • 1 piece of sausage, thinly sliced
For sauce
  • 2-3 tbs cooking oil
  • 1 tbs of butter
  • 1 medium size shallot, diced
  • 1 garlic, minced
  • 2 tbs of sour cream
  • salt and pepper for seasoning
Dressing
  • chilli flake
  • dry herbs (oregano will do...)



Method
  1. Cook fettuccine until you get desired consistency (al dente), drained and left aside for a while (remember to save some left over broth when draining fettuccine)
  2. Heat cooking oil and butter in non stick pan, sauté shallot and garlic
  3. Add on seafood and sausage until cooked well enough
  4. Add cream cheese and allow the sauce to thicken. Add in fettuccine and mix well with the sauce. You may add left over broth if the sauce to thick. Seasons with salt and pepper
  5. Off from heat and transfer to plate for serving, sprinkled with chili flake and dry herbs

p/s: sour cream goes well with seafood based pasta...you may use heavy cream or cream cheese if prefer for more subtle flavor...
