Luckiest enough, today I was presented with decent size squirrel that hmmmm.... sure enough will be on plate during lunch. I won't go into detail on how to prepare a squirrel because it is more to technical skills but rather, I would like to share with you the simplest dish that can be prepared without much ingredients.
Gutted and cleaned

Squirrel with simple ingredients-lemongrass
and turmeric
The process of stir fry very simple. All you need is thick bottomed wok, high heat and fast stirring action.
So let us begin...
  1. In a wok, heat up oil under high heat. Add on diced onion, crushed lemon grass and turmeric and constantly stir the mixture to prevent from charred.
  2. Add the squirrel into the wok and stir fry under high heat for 6-8 minute. Add 1/4 of water just to allow the meat to cook thoroughly. Lets the juice reduces until it become thick, creamy gravy.
  3. Season with salt and pepper. Served with rice.
