A squirrel, lemongrass and turmeric
Sometimes, you can't escape from over eagerly friend who like to give away exotic animal that he caught just because he knew how much you like that special delicacy. Luckiest enough, today I was presented with decent size squirrel that hmmmm.... sure enough will be on plate during lunch. I won't go into detail on how to prepare a squirrel because it is more to technical skills but rather, I would like to share with you the simplest dish that can be prepared without much ingredients.
Gutted and cleaned
Stir Fried Squirrel with lemongrass and turmeric (single serving)
  • squirrel (roughly 400g), cut into bite size
  •  three sticks of lemon grass, crushed
  • thumb sized of turmeric, crushed
  • 3 medium sized red onion, diced
  • 1/4 cup of cooking oil
  • salt and pepper for seasoning
  • 1/4 water

The process of stir fry very simple. All you need is thick bottomed wok, high heat and fast stirring action.
So let us begin...
  1. In a wok, heat up oil under high heat. Add on diced onion, crushed lemon grass and turmeric and constantly stir the mixture to prevent from charred. 
  2. Add the squirrel into the wok and stir fry under high heat for 6-8 minute. Add 1/4 of water just to allow the meat to cook thoroughly. Lets the juice reduces until it become thick, creamy gravy.
  3. Season with salt and pepper. Served with rice.
Making a pie pastry from scratch is not that daunting. It is easy as 1-2-3, which is  1 part liquid, 2 parts fat, 3 parts flour, plus keep everything cold. Having pre made my shortcrust pastry earlier, here I just want to show the end result of my Crispy shortcrust pie with beef and potato stuffing.
